Just because I eat Paleo doesn’t mean I eat meat breakfast, lunch and dinner. Believe it or not, it was only about 2 years ago that I was a vegetarian for quite some time! Eggplant Lasagna

I’ve been experimenting with Paleo lasagna for a while now, with varying success. Once upon a time lasagna was my favourite meal; with it delicious meaty sauce, tender pasta and creamy white sauce. Eggplant makes a delicious substitute for the pasta layers. Texture and flavour wise, they’re completely different. Just as tasty, but different. The eggplant becomes silky smooth when sandwiched between layers of meat sauce, giving the dish an extra dimension of creaminess.

Why share one paleo rum ball recipe when I can share two? Christmas is the time to be generous after all! These ones are completely different to my last post. They’re comparable to a classic bliss ball, whereas the last recipe was more like a truffle. Paleo Lamb Curry

A hearty, warming Paleo Lamb Curry – cook on stove top or follow my Thermomix instructions With the temperature heating up here we’ve moved away from eating such warming dishes, but every now and again I’ll get a craving and make a big batch up. Sometimes a salad just won’t cut it but this Lamb Curry hits the spot every time. It packs a nutritional punch too with the turmeric, fennel and many of the garam masala spices.
