Paleo Chicken Tikka Masala is always a winner, especially now the weather is cooling down. Whilst the flavours are complex and delicious, it’s surprisingly easy to make. It’s also suitable for fussy eaters as it’s dairy and gluten free and jam packed with flavour. You know how curries are always better the next day? Well for this recipe we make it in the slow cooker, so it will taste amazing from day 1. Curries are one of my favourite dishes, as you might have noticed. Why do I love them so much? They’re always super tasty but pretty easy to make. […]
There’s rumors around town that a Vietnamese restaurant is about to open up, which gave me a serious craving for the noodle salads I used to devour when I still lived in Sydney. I don’t often get homesick for the city, but whenever good food is mentioned my heart instantly aches! Sydney’s home to such a vibrant multicultural food heaven and the flavour choices are endless. Ahhh take me back! I conquered this craving/homesickness by revisiting my Vietnamese Chicken Salad recipe I posted a few months back and modified it to create a noodle salad. Don’t you just love a recipe that keeps on […]
Fajita generally refers to any grilled meat usually served as a taco or tortilla. So before all you Tex-Mex aficionados start hating on me, no I haven’t grilled the chicken and no, it isn’t being served with tortillas either. But what else do you call delicious meat, marinaded to perfection, served with capsicums and onion? Fajita will have to do for now! Or course if you have a BBQ or grill handy, please do use it. It will be far tastier. But if you’re like me and don’t have access to one, the smoky paprika in the marinade will be […]
Just because you’ve gone grain free doesn’t mean you have to give up life’s deliciousness. Making a few modifications to your favourite meals will ensure you can continue to enjoy all the flavours you love. For this paleo-take on a schnitzel, I’ve used almond meal to give the breadcrumb coating. I used chicken, but you could swap the meat for veal if you prefer.
For this Middle Eastern-inspired salad, the chicken is coated in a delicious spice mix then roasted, and is accompanied by a creamy tahini dressing. This is an awesome weeknight dinner, so quick and easy but packed with tasty, nutritious ingredients. You might have noticed I do love a salad that doubles as a meal. This pale-friendly salad is a great low carb meal that will leave you feeling satisfied.
This paleo chicken korma recipe is SO easy, and equally as delicious. It’s even better served the next day for lunch and freezes well. Being paleo, it’s dairy and gluten free as well. Perfect.I’m off to Thailand tonight for a little getaway with one of my sisters (yay!) which means two things: I might get a little slack on posting (sorry in advance); and, I need to make freezer-friendly meals for my boyfriend to heat up for lunches & dinners. I’m no 1950’s housewife, but if I don’t, I know he’ll just eat pizza and toast the whole week.
Sorry for my late posts this week, it’s been a crazy week at work! I’ve spent these past few days cruising by water around the islands of Gladstone (I swear I was working!). I hope a double post and a recipe will make up for it though.
