Paleo Beef Stroganoff


Feel like you’re missing out on creamy meals since switching to paleo or a dairy free life? Miss out no more, with this delicious Beef Stroganoff. It’s as good as the original, but without any of the tummy pain. I’ve even included Thermomix & Stove Top instructions to make life even easier for you.

I am a big fan of creamy dishes but just can’t do a bowl full of milky food anymore. The pain is just not worth it! You can still make all your favourites though, irrespective of your dietary concerns.

Sour cream is so easy to replicate with nuts and absolutely delicious, you’ll be kicking yourself you tolerated dairy for so long. Once you’ve got a batch made its so versatile in a host of recipes, like this delicious beef stroganoff. My partner even said he prefers mine to the real thing. Massive achievement!

Dairy free & Paleo

Beef Stroganoff

Serves 4

Ingredients:

  • 1 brown onion, halved
  • 500 g beef, rump, tenderloin, strips
  • 30 g ghee or coconut oil
  • 1 tablespoon paprika
  • 1/2 teaspoon cayenne, more if you like it spicy (1/2 teaspoon will make it mild spicy)
  • 250g Mushrooms
  • 20 g apple cider vinegar
  • 50 g water
  • 50 g tomato paste
  • 1 tablespoon vegetable stock concentrate or 1 stock pot concentrate
  • 1 teaspoon Dijon mustard
  • 100 g paleo sour cream

Serve with sweet potato mash, cauliflower rice or zucchini noodles.

Tip: In step 5, add only 10g ACV at first and taste. Depending on how sour your “sour cream” is, this may be tangy enough. If you feel it needs more, add the last 10g.

Thermomix Method

1. Slice Beef into strips, approximately 0.5cm thick (if not pre-sliced)
2. Chop onion 3 seconds/speed 7
3. Add ghee or oil, paprika, cayenne, sauté Varoma/3 minutes/speed 1
4. Add beef, cook 100C/10 mins/rev/speed 1
5. Add remaining ingredients, cook 100C/10mins/rev/speed 1

Stovetop method

1. Slice Beef into strips, approximately 0.5cm thick (if not pre-sliced)
2. Dice onion
3. In a large pan, heat ghee or oil on medium-high heat. Add onion, paprika and cayenne. Sauté for about 3 minutes, stirring frequently.
4. Add beef, cook a further 10 mins, stirring throughout. Take care to coat the meat in spice and sear the meat well.
5. Turn the heat down to medium. Add remaining ingredients, cook for another 10 minutes. Stir occasionally to prevent sticking.
