Lemon & Coconut Bliss Balls

Right now I’m soaking up the sunshine and natural beauty of Phuket, savouring delicious tropical fruits and coconut in all its glorious forms. If you’re in need of a little tropical holiday, but stuck at home or work, give these raw, vegan & paleo lemon bliss balls a go. Close your eyes and imagine you’re on a tropical holiday. The lemon and coconut flavour will help take you straight there.

I love bliss balls. They’re such an awesome, tasty little treat that can double as snacks or dessert. Packed with nutrition, simple to make and totally delicious; what more could you want?

LEMON & COCONUT BLISS BALLS

Makes about 24 bite sized balls

Ingredients:

1 cup organic raw almonds
1 cup organic raw cashews
1 cup organic desiccated coconut
2 cups organic dates
Zest of 1 large organic lemon
Juice of organic lemons
4 tablespoons chia seeds

Method:

1. Soak nuts, 4 hours or overnight. Soaking helps make them easier to digest. Rinse well after soaking.

2. In a blender place nuts, coconut, lemon rind and chia seeds and blend till quite fine.

Add dates and lemon juice until the mixture comes together.  
 
  3. You can either press this mixture into a tray lined with baking paper, or rolls into balls. Damp hands will help prevent the mix sticking to your hands. Roll in desiccated coconut (it’ll make them look prettier).

Refrigerate to help firm them up, generally 2 hours should do it. Enjoy!
