When I worked a FIFO job I was limited to eating whatever was available at camp. Whilst this was generally ok, not all camps are created equal and sometimes the food would suck. So I needed something that was not only delicous and nutritious, but I had to be able to make it without kitchen utensils. From this need emerged the (not so humble) chocolate chia pudding.
Why do I love chia seeds so much? They’re loaded with protein and good fats, like omega-3. These are the kinds of fats that make you thin, crazy huh? Check out my post on chia seeds here.
A pudding like this can be eaten for breakfast or lunch and will keep you full for hours. It’s so easy to make too, you can whizz this beauty up in a blender or by hand (I had to use a fork).
Serves between 3-4. It can be poured into smaller dishes to set or as one big container to scoop out from later.
Chocolate Chia Pudding
4T (50g) chia seeds
1 can coconut milk
2T (20g) cacao
2T (20g) honey or sweetner of your choice
1. Combine all ingredients well. Mix it well if doing it by hand, don’t leave any lumps of cacao!
Test for sweetness and modify if required.
2. Refrigerate overnight. Enjoy!
Tips: The best thing about this recipe is how adaptable it is; I’ve added bananas, sometimes with or without the cacoa, or blended it without the cacoa and added mango. My bf loves it when I layer it with blueberries. Get creative with combinations and share your tips below!
